Texas weather is great for many reasons, but cake decor is not one of them! Summer is a busy season for outdoor weddings and events- but can wreak havoc on your beautiful cake. Even in the best conditions, cake decor is very susceptible to heat. Hot weather can melt buttercream, make fondant droop, and your colors bleed! If any of those things happen, it can really bring down the appearance of your cake. While you can't control temperature, there are some things that you need to take into account when planning your event on a hot/humid day.
Due to the possibility of disaster, many cake designers will avoid certain ingredients in the summer months. Designers may try to sway you to use buttercream or a fruit filling instead of a custard based cream filling because it can spoil in the heat. Certain types of frosting require refrigeration (cream cheese and whipped cream frostings) so cake designers try to avoid using them in outdoor summer events. Certain types of ganache are fragile in the heat as well, so you may want to steer clear of these. Designers will typically try to stick to buttercream and fondant decor, so keep that in mind when you're planning your outdoor cake design!
When planning your event, make sure the cake is out of direct sunlight--especially if you are having an outdoor event. Make sure to have your cake under a tent of some sort, to try and minimize melting. Try to keep your cake in the refrigerator for as long as possible before pulling it out. This will help preserve the cake for as long as possible. If you keep these few things in mind when planning your event and designing your cake, you should be in good shape for your summer event!
